Sometimes you just have those lazy days when you want a nice homemade meal without the fuss. This unagi rice bowl is one of THE easiest weeknight meals you can make because all it really requires is a little bit of prep and assembling!

I buy these frozen unagi (eel) from the Asian grocery store that are already flavored. You should be able to find it in your local Asian grocery stores’ frozen aisle. Just heat in the microwave and slice it how you like. I made some rice with the Zojirushi to go underneath. Cut some cucumbers or other veggies of your choice and sprinkle some Japanese Shichimi (7 spice powder) on top. I added a hard boiled egg that was already in the fridge for extra protein and it’s done! How simple is that?? You can also purchase unagi sauce if you like extra sauce with the rice.
