Crunchy, satisfying shrimp toast. I really packed on the shrimp here since I accidentally made too much topping and didn’t have enough bread. If you’re looking for a quick app, keep reading! (and let’s be real here – these are not really healthy but oh so yummy)


I haven’t had shrimp toast in a super long time, and I think the last time I found it on a menu was at a Vietnamese Pho place. The shrimp paste is usually layered on quite thinly but my version was about 60% bread, 40% shrimp. I did shallow fry them rather than deep frying, which prevents them from soaking too much oil.

  • 12 medium or large size shrimp, peeled
  • 1 clove garlic
  • 6 pieces french bread sliced diagonally
  • Olive oil
  • Salt & Pepper to taste
  • Parsley (optional)
  1. Dry the peeled shrimp with a paper towel
  2. Finely chop the garlic
  3. Using the flat side of a large cleaver, smash the shrimp and chop finely (If you don’t have a cleaver, you can just chop as finely as you can or use a food processor)
  4. Stir the shrimp mixture with salt, pepper, and chopped garlic
  5. Continue stirring until the mixture is sticky and smooth (like the 1st photo)
  6. Place a spoonful of shrimp paste mixture onto a slice of bread and place the toast shrimp side down onto a hot pan of olive oil on medium low heat
  7. Shallow fry the toasts until the shrimp side turns pink and then flip
  8. Continue frying until golden brown and place onto towels to drain excess oil
