Happy New Year everyone!!!

I love ordering fresh rolls when we go to a restaurant that has them, yet I’ve never made them at home until now. Crazy right? It’s really quite simple and mostly prep work is involved. By making these at home, I can fill it with as much or as little of an ingredient that I like.

For these, I chose rice noodles, shrimp, tofu, cucumber, green lettuce and mint. You have to have lot of mint for that super fresh taste!

Cook your rice noodles according to the package, boil the shrimp and tofu and slice up the cucumber. That’s it!

I halved the shrimp so it’s easier when rolling and you may find at most restaurants they only put 2 shrimp in there. I put in 3 because I can! I show the order your ingredients should be placed so you get the shrimp and mint leaves peeking out.

For the sauce, I mixed 2 TBS peanut butter, 2 TBS oyster sauce, 1 TBS sweet chili sauce and enough water to thin it out to a consistency I like. You can definitely adjust the proportions to what you prefer. Like it more spicy? Add some Sriracha. Less spicy? Skip it altogether.
